FOR THE CHIA PUDDING:

3Tbsp chia seeds 

1Tbsp @the_harvest_table cordyceps 

1Tbsp @the_harvest_table vegan protein 

4 chopped dates 

1Tbsp caramel essence 

1Tbsp maple syrup (or sweetener of choice)

1/2tsp Himalayan salt 

1Tbsp almond butter

1cup plant-based milk of choice 

Mix all ingredients together well and place into the fridge to set over night. Add caramelised apples as a topping with a bit of granola and extra nut butter! 

 

FOR THE APPLE TOPPING:

1/2 apple chopped

1Tbsp coconut sugar

1tsp cinnamon 

1Tbsp coconut oil 

Squeeze of 1/2 lemon

Method:

 Squeeze lemon juice over the chopped apples to keep them from browning. Heat coconut oil in a pan on a high heat. Once melted, add in the apple, cinnamon, and coconut sugar. Cook until apples are golden brown and crispy.
