Ingredients
- FOR THE CHIA PUDDING:
3 Tbsp chia seeds
1 Tbsp @the_harvest_table cordyceps mushroom booster
1 Tbsp @the_harvest_table vegan protein
4 chopped dates
1 Tbsp caramel essence
1 Tbsp maple syrup (or sweetener of choice)
½ Tsp Himalayan salt
1 Tbsp almond butter
1 Cup plant-based milk of choice - FOR THE APPLE TOPPING:
½ Apple chopped
1 Tbsp coconut sugar
1 Tsp cinnamon
1 Tbsp coconut oil
Squeeze of ½ lemon
Method
FOR THE CHIA PUDDING:
Mix all ingredients together well and place into the fridge to set over night. Add caramelised apples as a topping with a bit of granola and extra nut butter!
FOR THE APPLE TOPPING:
Squeeze lemon juice over the chopped apples to keep them from browning. Heat coconut oil in a pan on a high heat. Once melted, add in the apple, cinnamon and coconut sugar. Cook until apples are golden brown and crispy.
