CHICKEN TACOS WITH A COLLAGEN SOUR CREAM
- Mini wholewheat tortillas
- Avo
- Shredded cabbage
- Grilled chicken
Use a muffin to toast tortillas by turning the tray tray upside down and wedging the tortillas in between the muffin holders to make a taco shape. Pop them into the oven on grill for about 5-10min until golden brown. Fill your tacos with avo, shredded cabbage, grilled chicken and mango salsa.
Mango salsa :
- 1 mango chopped
- 1/2 red onion finely chopped
- 1-2 mild green chillies chopped
- Handful of coriander finely chopped
- 1Tbs of white wine vinegar
Collagen Sour cream :
- 1/2Cup cashews
- 1/4Cup yoghurt
- Squeeze of 1/2 lemon
- 2Tsp honey
- 1Tsp white wine vinegar
- Pinch of salt
- 1Scoop of Collagen Granules/Multi Collagen Granules
Soak cashew nuts overnight in warm/hot water. Rinse and drain the next morning and add soaked cashews to the rest of the sour cream ingredients into a high-speed blender. Blend until smooth and add to your tacos!
