Ingredients
- 2 Med ripe bananas (about 1cup when mashes)
- 1 Tsp vanilla
- 3 eggs
- ¼ cup melted coconut oil
- ½ cup honey
- 1 ½ cup almond flour
- ½ Tsp salt
- 1 ½ Tsp cinnamon
- ¼ Tsp nutmeg
- 1 Tsp baking soda
- 2 Tbsp of Harvest Table Collagen Powder
- 1/3 cup grated carrot
- 1 grated apple (about one cup)
- ½ cup roughly chopped a walnuts (plus more for topping)
Method:
- Preheat the oven to 180 deg and grease your loaf tin.
- Peel bananas and mash together with fork.
- Add the eggs, vanilla, melted coconut oil and honey. Whisk until combined.
- In a separate bowl, whisk together dry ingredients then fold into wet. Do not over mix.
- Grate apple and carrot, squeeze out any additional liquid.
- Fold carrot, apple, and walnuts into the mixture.
- Pour into greased loaf tin and top with more walnuts.
- Bake for 48 -52 minutes or until golden brown and skewer comes out clean.
- Allow to cool, serve (we like it with a dollop of coconut yoghurt and a squeeze of honey.)
