Ingredients

  • 2 Med ripe bananas (about 1cup when mashes)
  • 1 Tsp vanilla
  • 3 eggs
  • ¼ cup melted coconut oil
  • ½ cup honey
  • 1 ½ cup almond flour
  • ½ Tsp salt
  • 1 ½ Tsp cinnamon
  • ¼ Tsp nutmeg
  • 1 Tsp baking soda
  • 2 Tbsp of Harvest Table Collagen Powder
  • 1/3 cup grated carrot
  • 1 grated apple (about one cup)
  • ½ cup roughly chopped a walnuts (plus more for topping)

Method:

  • Preheat the oven to 180 deg and grease your loaf tin.
  • Peel bananas and mash together with fork.
  • Add the eggs, vanilla, melted coconut oil and honey. Whisk until combined.
  • In a separate bowl, whisk together dry ingredients then fold into wet. Do not over mix.
  • Grate apple and carrot, squeeze out any additional liquid.
  • Fold carrot, apple, and walnuts into the mixture.
  • Pour into greased loaf tin and top with more walnuts.
  • Bake for 48 -52 minutes or until golden brown and skewer comes out clean.
  • Allow to cool, serve (we like it with a dollop of coconut yoghurt and a squeeze of honey.)
