Ingredients:
1 Cup OhMega peanut butter (+ ½ t salt if unsalted)
1 Cup Harvest Table coconut sugar
2 Tbsp Harvest Table Pure Collagen Powder
1 egg
1/2 Tsp vanilla essence

Method:

  1. Preheat the oven to 180 degrees.
  2. In a bowl, whisk all ingredients together until well combined.
  3. Lightly grease two cookie sheets with a neutral oil or cooking spray.
  4. Roll the cookie dough into 12 spheres, placing them at least 2 inches apart on the cookie sheet.
  5. Using the back of a fork, press down on each cookie to form the classic peanut butter cookie waffle texture on top.
  6. Bake for 8-9 minutes or until the edges are lightly brown.Let cool, then enjoy!
