Melt butter in a pan a medium heat. Add onions, garlic, ginger until onions are translucent. Squeeze 1/2 lemon juice and honey over with chopped mint and coriander. Add in your broccoli and peas and stir in your collagen. Season with salt and pepper and stir until peas have unfrozen. Turn down the heat to low then pour in your mac butter/tahini, hot water, and the rest of the lemon juice – stir for another 5min until all greens are covered and have a creamy consistency.
