Ingredients

  • 1Tbsp of plant-based butter
  • 1Cup frozen green peas
  • 1Cup broccoli (optional)
  • 1/2Red onion
  • 1/2Tsp crushed garlic
  • 1/2Tsp grated ginger
  • Handful of mint finely chopped
  • Handful coriander finely chopped
  • 1 Squeeze of a whole lemon
  • 2Tsp honey / maple syrup
  • 1/4Tbsp macadamia nut butter/ tahini
  • Dash of hot/boiled water
  • Pinch of salt and pepper
  • 1Scoop of collagen

 Method

 Melt butter in a pan a medium heat. Add onions, garlic, ginger until onions are translucent. Squeeze 1/2 lemon juice and honey over with chopped mint and coriander. Add in your broccoli and peas and stir in your collagen. Season with salt and pepper and stir until peas have unfrozen. Turn down the heat to low then pour in your mac butter/tahini, hot water, and the rest of the lemon juice – stir for another 5min until all greens are covered and have a creamy consistency.
